Are you looking for a quick meal that takes less than 20 minutes to make in a pot of low-calorie fried noodles? These simple Asian ramen noodles with beef and broccoli are the best quick, filling meal that is less greasy and has fewer calories than other fried noodles. The best part is the savoury sauce that adds more flavor to the beef broccoli ramen noodles. Plus, it’s healthy and nutritious. (You can add any vegetables you like)
Anna’s tips:
- Freeze the beef for 15 minutes. Then it’s easy to slice. Cut the beef against the grain. This way you’ll get nice tender and juicy beef. For more information on how to tenderize beef (velveting beef) like a Chinese restaurant, see my earlier post.
- Add the oil after you mix all the marinated ingredients. The oil can coat the beef so you don’t have to add too much oil when frying and the beef won’t stick together. This makes the dish less greasy and low in calories.
- Fry the minced garlic after you have browned the beef, not with the sauce. Frying brings out the flavor of the garlic better. This gives the beef and ramen noodles a nice garlic flavor.

- Fry the sliced beef at a high temperature so that it gets a nice golden brown color and isn’t steamed.

200g of packets ramen noodles
1 cup of broccoli
4 cloves minced garlic
1 tbsp of sesame oil
Marinated Beef:
0.6 lb of beef (economic beef)
1 tsp of black pepper
1.5 tbsp of oyster sauce
1/2 tsp of baking soda
1 tbsp of corn starch
1 tbsp of sesame oil
Sauce:
1.5 tbsp of oyster sauce
0.5 tbsp of soy sauce
0.5 tbsp of black pepper
1 tsp of black pepper
1 tbsp of ketchup
1 1/4 cups (315 ml) water, plus more as needed
How to make:
- Cut the beef against the grain into strips or cubes. Put them in a bowl.
- Add baking soda, oyster sauce, cornstarch and black pepper. Mix them well by hand.
- Add the sesame oil and mix by hand.
- Mince the garlic. Wash the broccoli, cut it into small pieces and set it aside.
- Heat the pan over medium heat. Add the sesame oil and beef when the pan is hot.
- Don’t turn the beef after 2 minutes or until the underside is golden brown.
- Add the minced garlic and stir-fry for 1 minute.
- Arrange on a plate.
- Add the sauce, ramen noodles, and broccoli to the pan. Cover with a lid.
- When the sauce boils, open the lid and stir the ramen noodles for 1 minute.
- Add the beef back in and stir for another minute or until the ramen noodles are tender.
- Ready to serve.
