Shirataki noodles are also called miracle noodles, zero pasta, or konjac noodles. They’re keto, low in calories and carbohydrates, but high in fiber (consisting of soluble fiber (glucomannan).
It’s a holy product for weight loss if you want to lose weight or are dieting. You can’t miss it, replace it with starch, you’ll feel full and not worry about gaining weight. The texture is a little chewy and gummy. They’re tasteless, so they can be combined with any sauce to give them flavor.
Shirataki noodles recipe
Since shirataki noodles are such a natural food for healthy weight loss. The recipe I’m going to share with you is of course suitable for keto, gluten-free, and whole30. That’s why I used low-fat chicken breast as a protein source and supplemented it with some veggies. So you can have a healthy and quick dinner in 20 minutes. If you’re vegetarian, you can also use fried tofu or dried bean curd instead of meat to increase the protein source.
Ingredients
The ingredients are simple, so you can make a quick and easy dinner in less than 20 minutes.
- Carrot – Since it doesn’t soften easily, it needs to be pan fried first.
- Onion – Cut the onion along the grain so it’ll be sweeter when fried. They need to be sautéed with the carrot at the beginning to release their flavor.
- Cabbage – This is the vegetable that’s often added to Chinese fried noodles in most Chinese restaurants or in China and Taiwan. However, you can use any other vegetable you like.
- Shirataki Noodles – You just need to drain them and rinse them with water, they don’t need to be cooked. You can add them to the pan right away.
- Noodle Sauce – This sauce is used for most fried noodles. You can fry any kind of fried noodles. It’s made from soy sauce, oyster sauce and sesame oil. It’s best to use sesame oil so that the fried noodles smell better because of the sesame oil.
Marinade chicken breast

- Soy sauce – for that salty flavor.
- Beaten egg – The main purpose of adding beaten egg is to wrap the chicken so it doesn’t lose its juice during frying.
- Cornstarch – to make the chicken breast tender and juicy.
- Oil – Add the oil in advance and let it cover the chicken. You don’t need too much oil when frying and the chicken won’t stick to the pan. This is a secret of Chinese restaurants who use it for most meat stir fry dishes.
Shirataki noodles nutrition
It’s made from the root of the konjac plant (konnyaku potato), which has high fiber content and thus slightly increases the feeling of satiety. So you don’t eat too much and feel full very quickly.
4 ounces (113 g) of miracle noodles have only 10 g of calories and 3 g of carbohydrates. This makes them a perfect substitute for pasta or any other kind of noodles.
How to cook
- Marinate chicken – first cut the chicken breast into strips. Then marinate with soy sauce, beaten egg and cornstarch and mix well. To learn how to cut the chicken breast so that the chicken is tender, see Tenderize Chicken For Stir Fry.
- Mix sauce – Mix soy sauce, oyster sauce, sesame oil and water in a medium bowl. Set aside. When you cook, just pour it all together, it's quick and easy.
- Fry chicken – Heat the pan over high heat, put the chicken in and turn it only after 1 minute. If you turn the chicken immediately, it'll be watery and not get a nice golden brown color.
- Add onions and carrots and fry them along with the chicken for about 1 minute. Take them to a plate and set them aside.
- In the same pan, bring the sauce to a boil, then add the miracle noodles and toss for 1 minute.
- Add the chicken back in with the vegetables and cabbage and stir-fry for 2 minutes. Then you're ready to serve.
other substitutions
For protein – chicken drumstick; ground beef, flank steak, shrimp, boneless pork.
For vegetables – you can also add any other veggies you love, such as zucchini, red bell peppers, snow peas, etc.
For Vegetarian Miracle Noodles.
You can add fried tofu or dried bean curd for protein. Or you can add just vegetables for vegan Miracle noodles.

Ingredients
STIR FRY:
- 300 g Shirataki noodles
- 1/2 onion ,slices
- 1/4 carrot ,slices
- 1/4 cabbage ,thinly sliced
- 1 tablespoon cooking oil or sesame oil
MARINADE CHICKEN:
- 0.45 lb 200g/chicken breasts, boneless and skinless ,sliced to thin strips
- 1 tablespoon soy sauce
- 1 teaspoon cornstarch
- 1 tablespoon beaten egg
SAUCE:
- 1 tablespoon oyster sauce
- 1.5 tablespoon soy sauce
- 1 teaspoon sesame oil
- 60 ml water or chicken broth
Instructions

- Prepare the vegetables – be sure to slice them.
- Mix sauce- mix soy sauce, oyster sauce, sesame oil, and water in a medium bowl. Set aside.
- Prepare shirataki noodles -Drain the water from the shirataki noodles. Rinse them briefly with cold water and set aside.
- Fry chicken – Add chicken to skillet over high heat, turning only after 1 minute to get a nice golden brown color. Then stir fry for about 2 minutes. (Note 2)
- Add onions and carrots and fry them along with the chicken for about 1 minute. Take them to a plate and set them aside.
- Bring the sauce to a boil in the same pan, add the shirataki noodles and toss for 1 minute. (Note 3)
- Add the chicken back in with the vegetables and cabbage and stir-fry for 2 minutes.
- Serve hot as a main dish or side dish.

Tips & Notes:
- The main purpose of adding beaten egg and cornstarch is to make the chicken breast tender & smooth.
- If you turn the chicken right away, it gets watery and doesn’t get a nice golden brown color. It will taste less delicious.
- The noodles must be mixed with the sauce before adding the other ingredients. This allows the noodles to absorb the sauce and become tasty. This is a PRO TIP from Chinese restaurants and this secret applies to all fried noodles. The sauce must be cooked before you add the noodles.
