This Beef Chop Suey is a classic Chinese beef stir-fry with a real sauce that tastes just like you’d find in a real Chinese restaurant! A great recipe for using up leftover vegetables from the fridge!

Ann’s Tips:
- Cut the beef against the direction of the grain so that the tissue can be separated and the bite is easier to make.
- If you want to marinate for more than half an hour or overnight, you should add baking soda and cornstarch 10 minutes before cooking. Otherwise, the beef will be tough if you add baking soda too long.
- When you fry the steak in the pan. Don’t overcrowd the pan, otherwise your steak won’t sear but will steam.
- Cut the onion along the lines to preserve its sweetness and texture.
What do you need:
MARINADE BEEF:
300g 0.67 lb flank steak, sliced 1/4 inch thick
1 tablespoon soy sauce
1 teaspoon sugar
1 teaspoon cornstarch
1 tablespoon rice wine, Shaoxing wine, or dry sherry
1/4 teaspoon baking soda
1 teaspoon oil
SAUCE:
1 tablespoon oyster sauce
1.5 tablespoon soy sauce
1/3 cup water
1/2 tablespoon cornstarch
Dash of black pepper
STIR FRY:
2 tbsp oil
2~3 garlic cloves, crushed
1/2 small onion, sliced
1/2 red bell pepper, sliced
2.8 oz/80g broccoli
2.8 oz/80g sugar snap pea/snow pea
2 stems scallion, cut into 1.5″/3cm piece
TO SERVE:
Steamed white rice
Sesame seeds (optional)
How to make:
- Cut the beef – To make the flank steak more tender, always cut against the grain.
- You can refer to my other post “How To Velvet Beef For Stir Fry?” There I show you how to cut the beef and how to tenderize it.
- Marinate the beef – Marinate it with all the ingredients. Mix well and marinate for at least 10 minutes (you can also leave it overnight). Add the cornstarch 10 minutes later.
- The sauce – Mix all the ingredients together. Set aside.
- Prepare the vegetables – Wash and prepare the vegetables. Set aside.
- Pan fry the beef – Place the oil in a large frying pan and heat over a medium-high heat.
- Add the steak to the pan in a single layer (so it gets a good sear) and cook for 1 to 2 minutes on each side. When the steak is cooked, remove it from the pan.
- Fry the spices – Add the remaining tablespoon of oil and the garlic to the same pan and fry for 1 minute.
- Fry the vegetables – Add broccoli fry for 1 minute. Add water and cover the pan to steam the broccoli. Then add the onion and sugar snap peas for another 1 to 2 minutes.
- Bring the sauce to the boil and then add the steak, bell pepper and spring onions for 2 minutes.
- Add 1 tablespoon of sesame oil and swirl to enhance the flavor. Remove from the heat immediately.
- Serve immediately with rice. Garnish with sesame seeds.
