Dan Dan Noodles: How To Make It?

Dan Dan Noodles is spicy, savory, full of earth and garlic flavors. The Sichuan Dan Dan noodle recipe consists of noodles tossed in an intense sesame and chili oil sauce with ground pork.

Ingredients

PORK TOPPING:

  • 250g/8oz ground pork, pork mince
  • 2 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 tablespoon Chinese cooking wine

CHILI OIL:

  • 1/2 cup oil
  • 1/4 cup crushed red pepper flakes
  • 2 tablespoons sichuan peppercorns (powder)
  • 5 sliced gingers
  • 3 scallions, cut into 1 1/2-inch (4-cm) pieces

DAN DAN NOODLE SAUCE:

  • 2 tablespoon chili oil (your prepared chili oil)
  • 3 tablespoon sesame sauce or paste
  • 1/2 teaspoon black vinegar
  • 3 tablespoon soy sauce
  • 3 cloves garlic,
  • 1/2 cup noodle water or hot water

TO SERVE:

  • 500g/1lb white fresh noodles
  • 2 scallions, finely sliced
  • 1 tablespoon chopped peanuts
  • 1 bunch leafy greens (spinach, bok choy, or choy sum)

Instructions

CHILI OIL :

  • Add oil to pot, add scallions and ginger slices until golden brown and their aroma is released, then remove scallions and ginger slices. (Fried scallions and ginger slices are more fragrant).
  • Pour the oil to the crushed red pepper flakes, Sichuan peppercorns (powder), and mix well to make a red oil.
  • You can store leftover chili oil in a glass jar and keep it in the refrigerator. It will keep for months.

PORK:

  • Cook ground pork - Heat the oil in a skillet over high heat. Add the pork and stir-fry, breaking up the lumps, until it is no longer pink.
  • Slowly sauté the ground pork over medium heat until dry and fragrant. (Slowly stir-fry the minced pork until it is crispy).
  • Add soy sauce, cooking wine and ground Sichuan pepper and bring to a boil. Let it simmer for 2 minutes. Then transfer to a bowl.

NOODLES & BOK CHOY:

  • Bring a large pot of water to a boil. Cook the noodles according to package directions.
  • Add the veggies for the last 1 minute of cooking.
  • Drain.

ASSEMBLY:

  • Divide the Dan Dan noodle sauce among four bowls and mix well.
  • Pour in noodles, top with pork, chopped peanuts (optional) and scallions.
  • To eat, mix everything together to coat the noodles well with the sauce.
  • For chili oil, you can put more or less in it, judge for yourself.
