PORK TOPPING:
- 250g/ 8oz pork mince (ground pork)
- 2tbsp Soy sauce
- 1tsp Sugar
- 1 tbsp Chinese cooking wine
- Ground Sichuan pepper
CHILI OIL :
You may buy it from an Asian store.
- 1/2 cup oil
- 1/4 cup crushed red pepper flakes
- 5 Sliced ginger
- 3 scallions, cut into 1 1/2-inch (4-cm) pieces
Tips: You can store leftover chili oil in a glass jar and keep it in the refrigerator. It will keep for months.
DAN DAN NOODLE SAUCE: (for four portions)
- 2 tbsp Chili oil (your prepared chili oi). You can put more or less in it, judge for yourself.
- 3 tbsp Sesame sauce or paste
- 1/2tsp black vinegar
- 3 tbsp Soy sauce
- 3 garlic cloves , minced
- 1/2 cup Noodle water or hot water
TO SERVE:
- 500g/1lb white fresh noodles
- 2 scallions , finely sliced
- 1 tbsp chopped peanuts
- 1 small bunch bok choy (or any leafy greens)
How To Make Chili Oil?

- Add oil to pot, add scallions and ginger slices until golden brown and their aroma is released.
- Then remove scallions and ginger slices. (Fried scallions and ginger slices are more fragrant).
- Pour the oil to the crushed red pepper flakes, Sichuan peppercorns (powder) and mix well to make a red oil.
- Store in a glass jar and keep in the refrigerator. It will keep for months.
How To Make Dan Dan Noodles?
PORK:
- Cook ground pork – Heat the oil in a skillet over high heat. Add the pork and stir-fry, breaking up the lumps, until it is no longer pink.
- Slowly sauté the ground pork over medium heat until dry and fragrant. (Slowly stir-fry the minced pork until it is crispy).
- Add soy sauce, cooking wine and ground Sichuan pepper and bring to a boil. Let it simmer for 2 minutes. Then transfer to a bowl.
NOODLES & VEGGIES:
- Bring a large pot of water to a boil. Cook the noodles according to package directions.
- Add the bok choy for the last 1 minute of cooking.
- Drain.

DAN DAN NOODLE SAUCE:
- Divide the Dan Dan noodle sauce among four bowls and mix well.
- Pour in noodles, top with pork, chopped peanuts (optional) and scallions.
- To eat, mix everything together to coat the noodles well with the sauce.
