The Best Garlic Spam Fried Rice

This Korean-style garlic spam fried rice is savory, sweet, umami, and slightly hot. My secret to the flavor of this fried rice is the addition of lots of garlic and some crushed Sichuan peppercorns. The crushed Sichuan peppercorns make this Korean garlic spam rice even tastier.

Ingredients

  • 4 cups cooked rice or overnight rice (Note 1)
  • 4 eggs
  • 1 can spam cut into cubes
  • 5 cloves garlic, chopped
  • 1 cup roasted seaweed, (optional)
  • 2 green onions, chopped
  • 1 teaspoon sesame seeds

SAUCE:

  • 2.5 tablespoon soy sauce
  • 1/2 teaspoon crushed red chili flakes or chili powder (optional) (Note 2)
  • 1/2 teaspoon crushed Sichuan peppercorn (optional) (Note 2)
  • 1 tablespoon sugar
  • 1 tablespoon sesame oil

Instructions

  • Prepare a bowl, add soy sauce, sugar, crushed red chili flakes, crushed Sichuan peppercorn and sesame oil. Mix well and set aside.
  • Chop garlic and slice green onion. Cut the spam into cubes. Set aside.
  • Heat the pan to medium heat, add the oil and then the spam cubes. Stir-fry them until they turn a golden brown color. Put them on the left side of the pan.
  • Add the garlic and stir-fry until you smell the aroma, then put them on the left side of the pan.
  • Add the oil and eggs and stir fry them for 1 minute. Stir fry all the ingredients and then add the cooked rice.
  • Add the sauce and roasted seaweed. Mix them well for 1 minute.
  • Transfer to a plate. Sprinkle the sliced green onion and sesame seeds on top.
  • Ready to serve.

Tips & Notes:

1. Freshly cooked rice - if you're going to use freshly cooked rice. When you cook the rice, the water should preferably be about 1/4 cup less than the usual cooking water so that the cooked rice isn't too soft and mushy. Make sure you let it get cold. This way the fried rice won't stick to the pan.
Overnight rice - If you're using rice that has been stored overnight in the refrigerator, you don't need to reduce the water. Scientific research has shown that overnight rice has fewer calories and absorbs less oil than freshly cooked rice.
2. I recommend adding some crushed red chili flakes and crushed Sichuan peppercorns. They add more flavor to the spam fried rice. If you can't stand spiciness, you can leave them out.
