This Korean-style garlic spam fried rice is savory, sweet, umami, and slightly hot. My secret to making this fried rice more flavorful is the addition of lots of garlic and some crushed Sichuan peppercorns. The crushed Sichuan peppercorns make this Korean garlic spam rice even tastier. And for a balanced and healthy meal, you can add any vegetables you like.
Why is my fried rice soggy?
The reason why the fried rice is soggy is mainly because the cooked rice isn’t dry enough.
Freshly cooked rice – if you want to use freshly cooked rice. When you cook the rice, the water should preferably be about 1/4 cup less than the usual cooking water so that the cooked rice won’t be too soft and mushy. Make sure you let it get cold. This way the fried rice won’t stick to the pan.
Overnight rice – If you use rice that has been stored overnight in the refrigerator, you don’t need to reduce the water. Scientific research has shown overnight rice has fewer calories and absorbs less oil than freshly cooked rice.

4 Cups of Cold Cooked Rice
4 eggs
1 can of Spam cut into cubes
1 cup roasted seaweed
2 green onions, chopped
1 teaspoon sesame seeds
5 cloves garlic, chopped
SAUCE:
2.5 tablespoon soy sauce
1/2 teaspoon crushed red chili flakes or chili powder
1/2 teaspoon crushed Sichuan peppercorn
1 tablespoon sugar
1 tablespoon sesame oil
How to make:
- Add soy sauce, sugar, crushed red chili flakes, crushed Sichuan peppercorn, and sesame oil in a bowl. Mix well and set aside.
- Chop garlic, and slice green onion. Cut the spam into cubes. Set aside.
- Heat the pan to medium heat, add the oil and then the spam cubes. Stir-fry them until they turn a golden brown color. Put them on the left side of the pan.
- Add the garlic and stir-fry until you smell the aroma, then put them on the left side of the pan.
- Add the oil and eggs and stir fry them for 1 minute. Stir fry all the ingredients and then add the cooked rice.
- Add the sauce and roasted seaweed. Mix them well for 1 minute.
- Transfer to a plate. Sprinkle the sliced green onion and sesame seeds on top.
- Ready to serve.
