Egg Burrito with Salsa: The Best Breakfast Recipe

This is the best recipe for egg burritos with tomato salsa and mayo sauce I've ever had. It's full of egg and cheese flavor, slightly sweet, sour, and a bit spicy.

Ingredients

  • 2 pieces of 8-inch tortillas (20cm)
  • 4 eggs
  • 3 tbsp milk
  • 1 tbsp mayonnaise
  • 2 pinches salt
  • 2 pieces bacon
  • Sriracha sauce
  • 2 pieces cheddar cheese

TOMATO SALSA:

  • 5 cherry tomato
  • 2 tbsp chopped onion
  • 2 tbsp chopped jalapenos
  • 2 pinches salt

DRESSING SAUCE:

  • 2 tbsp mayonnaise
  • 2 tbsp honey

Instructions

  • Slice the cherry tomatoes, onion, jalapeno and bacon. Set aside.
  • Mix the cherry tomatoes, onion and jalapeno in a bowl. Set aside.
  • For the dressing, mix the mayonnaise and honey in a bowl.
  • Combine four eggs, milk and mayonnaise in a container and mix well.
  • Cook the scrambled eggs over low heat and transfer to a plate when they're 80% cooked.
  • Fry the bacon and add them to the plate when they're cooked.
  • Heat the tortillas and put them on a plate.
  • Pour the Sriracha sauce, tomato salsa, bacon, egg, dressing sauce and cheddar cheese over the tortillas.
  • Wrap the tortillas and fry both sides for 1 minute over low heat.
  • Remove the tortillas from the pan and then cut them in half. Pour the dressing sauce and celery over the tortillas.
  • Ready to serve.

Tips & Notes:

If you add milk and mayonnaise, the scrambled eggs will be juicy and creamy, just like scrambled eggs in a restaurant.
