Egg and corn breakfast quesadilla take less than 10 minutes to prepare. It's an easy, quick, and healthy breakfast for adults and kids.
Beat two eggs in a bowl, mix well and then add the sweet corn, mix well.
Heat the skillet over medium heat, add the oil and then the egg.
Place the tortilla on top of the egg. Fry in the pan for 1 to 2 minutes.
Transfer it to a plate. Cover the plate with the pan and flip it down so you can flip it to the other side.
Put the grated mozzarella cheese on one side and then flip it over.
Flip it to the other side and fry it in the pan for another minute.
Ready to serve.
