Ingredients

  • 1 piece whitefish fillet
  • 1/2 teaspoon salt
  • 30~40 pieces carrot confit
  • 1/4 cup white wine

Instructions

  • PREPARE FISH - First cut the whitefish filet into 3 equal parts and sprinkle both sides with a little salt.
  • Line the pan with parchment paper and place 10-15 pieces of carrot confit on top (depending on how big the fish is).
  • Put the whitefish on the carrots and then put another layer of carrot confit on the fish filet.
  • Pour some olive oil over the whitefish and the carrot confit. Pour some white wine and cover the pot.
  • COOK THE FISH - Turn the heat to medium, wait for the white wine to boil, then switch to low and cook for about 10 minutes until the fish is cooked through.
  • READY TO SERVE - Put the whitefish and the carrots on a plate and pour the rest of the soup around the plate.
