Crispy Baked Chicken Tenders - (Honey Garlic Lemon)

These honey garlic lemon oven baked chicken tenders are as crispy, juicy and tender as fried chicken. They're also slightly salty, sweet and full of garlic and lemon flavor. They're very refreshing and go well with summer. And they go best with a glass of white wine or a bottle of beer.

Ingredients

  • 1.5 lb (700) chicken tenderloins
  • 2 eggs
  • 1 1/2 cup (350g) panko breadcrumbs (Note 1)
  • 1/2 tsp salt
  • 1/2 tsp black pepper

HONEY GARLIC LEMON SAUCE:

  • 8 cloves garlic, minced
  • 3.5 tbsp honey
  • 1 fresh lemon (Note 2)
  • 3 tbsp soy sauce
  • 2 tbsp cornstarch with 1/2 bowl of water (Note 3)

Instructions

HONEY GARLIC LEMON SAUCE:

  • Mince the garlic and set aside.
  • Squeeze fresh lemon juice; set aside.
  • Heat a small skillet over medium heat and add oil and garlic, stirring for 1 minute.
  • Add soy sauce and honey and mix well with garlic.
  • Add lemon juice and cornstarch water.
  • Stir well with a spoon.

OVEN BAKED CHICKEN TENDERS:

  • Preheat oven to 200C/390F.
  • Spread panko breadcrumbs on a baking sheet. Bake for 5 minutes or until they're golden in color.
  • Transfer them to a plate.
  • Put two eggs in a large bowl and whisk them with a fork.
  • Add the chicken fillets, salt and black pepper. And mix them well.
  • Take the chicken with tongs and dip it in the breadcrumbs from both sides. Sprinkle the surface with breadcrumbs and then press it down. Repeat the process with the remaining chicken.
  • Bake for 15 to 20 minutes.
  • Sprinkle some parsley on top (optional).
  • You can mix the honey garlic lemon sauce with baked chicken fillets. Or dip the sauce.

Tips & Notes:

  1. Using panko breadcrumbs provides a crispier texture than regular breadcrumbs because the breadcrumb grains are larger.
  2. Fresh lemon juice is amazing. Not only does it taste fresher than concentrated lemon juice. It also brings the feeling of summer.
  3. You need to mix the cornstarch well with water before adding it to the sauce. If it's too thick, you'll need to add more water. If it's too thin, you need to add more cornstarch with water.
  4. If you want a thick skin, you can dip the mixture of bread crumbs and egg mixture twice.
