This super simple marinated cucumber salad is easy to make. It only takes 5 minutes to prepare, 1 hour to marinate and it’s ready to eat. To make it taste even better, you should marinate it for longer than 2 hours, preferably half a day or more. The best thing is that it can be stored in the refrigerator for 5 days. You can serve it with meals and a glass of white wine or beer.
Marinated cucumber recipe
Marinated cucumber salad is usually made with Telegraph or Continental cucumbers (the longest and thinnest cucumbers) or Lebanese cucumbers (short and thin). You can choose whichever you prefer. I’ll show you how to slice the cucumbers. These thinly sliced cucumbers absorb more sugar and the vinegar adds flavor more easily. It goes well with fried chicken, baked ribs, or other meat dishes. It helps you get rid of the greasy fat and aids in digestion. It’s also a good choice as an accompaniment to white wine or beer.
How to make
- Wash the cucumbers first.
- Cut them into thin slices (1 mm thick) with a knife, but don't cut through them. Cut them after 7 to 10 slices. In this way, the cucumbers are easier to pickle and taste better.
- Put the salt, sugar, and vinegar in a glass container.
- Cover the lid and shake it to mix the salt and sugar slightly.
- Add the sliced cucumbers.
- Cover the lid and shake it up and down until most of the sugar and salt have melted. Don't worry about the vinegar not covering the cucumber. After half an hour to an hour, it'll release excess water and cover the cucumber.
