I made this breakfast quesadilla with egg and corn when I was short on time. It’s a very simple, quick, and healthy breakfast. You can just use frozen or canned corn and your breakfast will be ready in less than 10 minutes. This is a popular breakfast for adults and kids.
INGREDIENTS:
1/2 cup sweet corn
2 eggs
1 cup grated mozzarella cheese
1 tbsp oil or butter
1 tortilla
COOKING INSTRUCTIONS:
- Beat two eggs in a bowl, mix well, and then add the sweet corn, and mix well.
- Heat the skillet over medium heat, add the oil, and then the egg.
- Place the tortilla on top of the egg. Fry in the pan for 1 to 2 minutes.
- Transfer it to a plate. Cover the plate with the pan and flip it down so you can flip it to the other side.
- Put the grated mozzarella cheese on one side and then flip it over.
- Flip it to the other side and fry it in the pan for another minute.
- Ready to serve.
