This cabbage and beef stir fry is tasty, delicious, healthy, and balanced with vegetables. It’s so easy and quick to make that you need less than 20 minutes. That’s why I cook it very often, once a week. It can be a quick weekday dinner.

Ann’s Tips:

- Cook the cabbage stems part for 1~2 minutes and then add the leaf part. The stem part is tough and therefore needs to be cooked longer.
- Cut the beef against the grain so that the tissue can be separated and the bite is easier to make.
- If you want to marinate for longer than half an hour or overnight, you should add baking soda and cornstarch 10 minutes before cooking. Otherwise the beef will become tough if you add the baking soda for too long.
- When frying the steak in the pan. The pan mustn’t overcrowd the pan, otherwise your steak will steam instead of sear.
What do you need:

0.67 lb (300g) cabbage
1/4 carrot
5 gloves garlic, sliced
MARINADE BEEF:
300g 0.67 lb flank steak, sliced 1/4 inch thick
1/2 tablespoon soy sauce
1/2 tablespoon dark soy sauce
1 teaspoon sugar
1 tablespoon rice wine, Shaoxing wine, or dry sherry
1/4 teaspoon baking soda
1 teaspoon cornstarch
1 tablespoon oil
SAUCE:
1/2 teaspoon salt
Dash of black pepper
1/2 tablespoon sesame oil

How to make:
- Prepare the beef – Slice the flank steak against the grain (the grain is the length of the steak) the long way 1/4 inch think pieces.
You can refer to my other post “How To Velvet Beef For Stir Fry?” There I show you how to cut the beef and how to tenderize it. - Add the remaining ingredients for the marinade, mix well and marinate for 10 minutes (you can also leave it overnight). Finally, add the oil and mix well.
If you leave it overnight, don’t add the baking soda. Add it before you want to cook it. - Prepare the vegetables – Wash and prepare the vegetables. Set them aside.

- Fry the aromatics – Add oil, garlic and carrots to the pan and fry for 1~2 minutes. Add the cabbage stems part and leaves and cover the pan for 1 minute.
- Open the pan and stir for 1 minute (medium rare). Remove and transfer to a plate. Set aside.
- Brown the beef in the pan – Place the oil in a large frying pan and heat over a medium-high heat. Add the steak to the pan in a single layer (so that it’s well-seared) and fry for 1 to 2 minutes on each side.
- Add the cabbage, salt and black pepper and stir for 1 minute. Before putting it on a plate. Add sesame oil to give the dish more flavor.
- Ready to serve hot.
