Baked pork chop and fried rice in a sweet sour sauce is a Hong Kong dish. The cheese is all over the surface, the sweet and sour sauce is hidden underneath, and the fried pork chop is thick and juicy on top of the fried rice. This has to be a favorite dish for adults and kids alike.
When the cheese is toasted, it creates a silky effect and a strong cheese smell that’s addictive. When you put it in your mouth, the strong cheese flavor combined with the juicy pork chop and fried rice in the sweet and sour sauce makes you feel very satisfied.

Baked pork chop recipe
Today I want to show you how to make it. Restaurant-level color, flavor, and aroma! It’s guaranteed that even beginners can prepare it successfully.
And the most important tip is how to cut the pork chop. Just cut with a couple of knives where the tendons are on the edge of the meat so it doesn’t shrink. The secret tip for tenderizing pork chops is to add beaten egg and cornstarch, which make the pork chop tender and juicy.
I usually prepare portions for a few days, marinate the pork chops and freeze them separately, mix the sweet and sour sauce in a jar, and put it in the refrigerator. This way I can prepare it anytime and it’s ready in a short time. If you are lazy or have no time to make fried rice, you can use steamed rice instead.


Ingredients

Baked pork chop and rice in sweet and sour sauce ingredients consist of:
- Pork chop – there are tips to tenderize pork chops, see other post Pan Fried Boneless Pork Chop. If you follow the instructions, you’re guaranteed to get tender and juicy pork chops. Here’s how Chinese restaurants tenderize pork chops.
- Onion – to have the aroma and sweetness of the onion. It also adds some vegetables to the dish.
- Tomato – tomatoes make the dish sweet and sour.
- Steamed rice – it’s used for pan fried rice by putting it on the bottom and putting the fried pork chops on it.
- Eggs – they’re used for fried rice and marinated pork to soften the meat.
- Shredded cheese – put it on the surface of this dish, after baking it’ll be full of the rich flavor of cheese.
Pork chop marinade

It’s made of soy sauce, rice wine (Shaoxing wine or dry sherry), beaten egg, and cornstarch. The tip is to add beaten egg and cornstarch to make the pork chop tender and juicy.
Sweet and sour sauce

True, this dish is called Baked Pork Chop and Rice in Sweet and Sour Sauce. But the most important thing is the sweet and sour sauce, it determines the taste of the whole dish.
It consists of ketchup, soy sauce, vinegar, and sugar. It’s a combination of sour, sweet and salty that will give you an appetite.

How to make

- Prepare pork chop – Cut the pork into 1-1.5 thin slices and use the back of a knife or a meat mallet to loosen the pork chop. You'll need to tap both vertically and horizontally against the grain and then break up the tendons. You can read and follow the "Pan-Fried Boneless Pork Chop" instructions in my earlier post.
- Marinade pork chops – Put soy sauce, rice wine, egg, ground black pepper, cornstarch, and pork chop in the zip bag or a big bowl. Use your hand to message them with these sauces first so that the pork chop can absorb the sauces better. Put them in the refrigerator for at least 2 hours. You can also leave them overnight.

- Prepare fried rice – You can read and follow the "Egg Fried Rice" instructions in my earlier post. Or if you're too lazy to prepare, you can use white steamed rice. Because the pork chop and sweet and sour sauce already have flavor.
- Transfer to a large bowl or other container ready for baking.
- Pan fried pork chops – Put 1 tablespoon of oil in the same pan and add the pork chops. Be sure to dip the pork chops into the oil in the pan so that each piece of pork chop is coated with oil. Turn the chops only after 2 to 3 minutes so that they get a nice caramel color while frying. Fry each side for about 2 to 3 minutes, or until the underside is caramelized.
- Take the pork chops to a plate and cut them into slices about 1" wide when cool. Place them on top of the fried rice and wait for them to bake.

- Prepare sweet and sour sauce – add 1 teaspoon of oil to the same pan and stir-fry garlic and onions in it for 1 minute. Add tomatoes and sweet and sour sauce to the pan and whisk the sweet and sour sauce well before pouring. Let it boil for about 2 minutes. Then pour it over the pork chop and rice.
- Finally, add shredded cheese on top. At the same time, preheat the oven to 200~230 degrees.
- Put them in the oven and bake them until the cheese melts on the surface and they've a charred effect.

Recipe substitutions and variations:

Add veggies: if you’d like more vegetables, zucchini, broccoli, and snow peas are a great addition.

Ingredients
SWEET AND SOUR SAUCE:
- 3 tablespoons ketchup
- 2 tablespoons sugar
- 1 teaspoon apple cider vinegar
- 1 tablespoon soy sauce
- 1/2 cup /100 CC water
- 1 tablespoon cornstarch
- 2 gloves garlic ,minced
- 1/4 onion ,sliced
- 1 tomato ,cut into 1” chunks
MARINADE PORK:
- 0.67 lb /300g pork chop, ,sliced into 1~1.5cm thickness
- 1 tablespoon rice wine ,Shaoxing wine (or dry sherry)
- 1 tablespoon soy sauce
- 1 beaten egg
- 1 tablespoon cornstarch
- 1 teaspoon ground black pepper
FRIED RICE:
- 2 bowls cold fresh-cooked rice or refrigerator overnight rice
- 1 tablespoon soy sauce
- 1/2 teaspoon salt
- 1 teaspoon ground black pepper
BAKING:
- 1.5 cup Shredded cheese
Instructions

PREPARE FRIED RICE:
- Beat 2 eggs in a bowl and mix well with the white rice. Add 1 tablespoon of oil to a large skillet and heat over medium-high heat. Add the rice to the pan, stir fry for 1 minute, add soy sauce, ground black pepper and salt and stir fry for another 1 to 2 minutes. Or an easy way, you can use white steamed rice. Because the pork chop and sweet and sour sauce already have flavor. Transfer to a large bowl or other container ready for baking.
FRIED PORK CHOPS:
- Put 1 tablespoon of oil in the same pan and add the pork chops. Be sure to dip the chops into the oil in the pan so that each piece of pork chop is covered with oil. Turn the chops only after 2 to 3 minutes so that they get a nice caramel color while frying. Fry each side for about 2 to 3 minutes, depending on how thick the pork chop is. Thin pork chops will take about 4 to 6 minutes, thick pork chops about 5 to 8 minutes. Or until the underside is caramelized. Take the pork chops to a plate and cut them into slices about 1" wide when cool. Place them on top of the fried rice and wait for them to bake.
PREPARE SWEET AND SOUR SAUCE:
- Add 1 teaspoon of oil to the same pan and stir-fry garlic and onions in it for 1 minute. Add tomatoes and sweet and sour sauce to the pan and whisk the sweet and sour sauce well before pouring. Let it boil for about 2 minutes. Then pour it over the pork chop and rice.
- Finally, add shredded cheese on top.
- Preheat the oven to 200~230 degrees, put them in the oven and bake them until the cheese melts on the surface and they've a charred effect.
- Ready to serve.
