It’s pumpkin season and I love pumpkin so much. I make coconut pumpkin chicken as a main dish, pumpkin salad as a side dish and oatmeal walnut pumpkin pie for dessert. My whole family really likes them.

Tips for Coconut Pumpkin Chicken:
- Sauté the pumpkin until the surface is browned to make it tastier and sweeter.
- I use Thai yellow curry, it’s the least spicy curry.
If you can’t eat too spicy. - Fry the curry paste on low heat to make the curry more flavorful. But make sure it doesn’t burn.
- If you eat less spicy food, add 300 g of coconut milk.

300g pumpkin
290g chicken breast
200ml coconut milk
70g Thai yellow curry paste
1/2 onion
Tips for Pumpkin Pie and Salad:
- I suggest baking the pumpkin, it’ll be tastier and sweeter.
- Add oil to the pumpkin and stir well before baking.
Oatmeal Walnuts Pumpkin Pie
Crust:
100 g oatmeal
40 g honey
1 egg white
1/2 teaspoon cinnamon powder
Pumpkin filling:
200 g pumpkin
1/2 apple
1/2 teaspoon cinnamon
1 tablespoon brown sugar
1 egg yolk
40 g walnuts
Pumpkin Salad
400g pumpkin
2 tbsps Greek yogurt
1 tbsp cream cheese
1/2 cucumber
1/2 apple
some salt
some olive oil
some nuts, raisins, or cranberries
